Ingredients

  • 4 Ea. Medium yellow squash
  • 2 tsp Olive Oil
  • 1/4 cup Parmesan Grated
  • 1/2 cup Panko Breadcrumbs
  • 1 tsp Italian seasoning
  • 1 tsp Kosher Salt

Instructions

  • Preheat oven to 425 and line a baking sheet with parchment paper.
  • Cut squash into 1/4 inch slices and cut the slices into half. Toss with olive oil and salt.
  • Combine breadcrumbs, parmesan and Italian seasoning.
  • Evenly top the squash with breadcrumb mixture and bake for 10-15 mins or until breadcrumbs and parmesan are browned.
  • Serve with your favorite chicken or pasta dish and enjoy!
