Crispy Parmesan Yellow Squash

Crispy Parmesan Yellow Squash
Ingredients
- 4 Ea. Medium yellow squash
- 2 tsp Olive Oil
- 1/4 cup Parmesan Grated
- 1/2 cup Panko Breadcrumbs
- 1 tsp Italian seasoning
- 1 tsp Kosher Salt
Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper.
- Cut squash into 1/4 inch slices and cut the slices into half. Toss with olive oil and salt.
- Combine breadcrumbs, parmesan and Italian seasoning.
- Evenly top the squash with breadcrumb mixture and bake for 10-15 mins or until breadcrumbs and parmesan are browned.
- Serve with your favorite chicken or pasta dish and enjoy!
