Ingredients
Salmon Should be about an inch thick. My recommendation is to go the fish counter at your local supermarket. Not only will you get the freshest salmon but you can request a center cut fillet. A center cut fillet will be the thickest and best for taking on this marinade. Citrus For this recipe we are using limes, lemons, and Navel oranges. Look for nice undamaged rinds as you are using this in the recipe along with the juice. Also feel the fruits they should be firm but not hard as hard citrus fruits are often under ripe. Soy Sauce Go for a nice soy sauce. My recommendation is go to your local asian grocery store or use a nicer tamari style as this style of soy sauce has a nicer deeper and richer flavor. Gochujang Is a fermented chili paste that is popular in Korean cuisine. It has a nice mild heat with an amazing umami factor. It is available in most grocery stores in the asian section. However if you are unable to find it a good substitute would be a sambal or sriracha. Mirin Is a sweetened rice wine that is available in most grocery stores. However if you are unable to find it substitute it with a dry white wine along with a bit of white sugar.Ginger Will add an additional layer of flavor and a pleasant ginger scent to the dish.

- For the best distribution of flavor place salmon skin side up in the marinade this will also keep the skin from sticking to the pan.
- If you want to maximize the flavor you get from your garlic and ginger use a microplane or zester to grate them. This will maximize surface area and allow for more flavor to go into the marinade.
- When you go to your local supermarket the best thing you can do is buy your seafood from the fish counter as they will always give you the best deals as well as the freshest product. And if they don’t have what it is your looking for they almost always have a recommendation for a substitute.
