Collard Greens with Ham Hock

Ingredients

  • 2 bunches Collard Greens
  • 1 ea Small Yellow Onion
  • 2 Tbsp Olive Oil/Lard/Bacon Grease
  • 3 ea Garlic Cloves
  • 2 tsp Salt
  • 1 tsp Brown sugar
  • 1/2 tsp Crushed Red Pepper
  • 1 Tbsp Apple Cider Vinegar
  • 2 Lbs. Ham Hock
  • 6-7 cups Chicken Broth
  • Hot sauce, seasoned salt optional

Instructions

  • Dice and sauté Onion until translucent about 3 mins
  • Add garlic and seasonings cook for 30 secs.
  • Add Ham and cover with broth cook covered for one hour.
  • Remove collards from the stem and chop into one inch strips.
  • Add greens to simmering broth cover and cook on low for one hour.
  • Remove ham hock from broth. Carefully, shred the ham hock from the bone using a fork. Return the shredded meat back into the pot.
  • Add additional hot sauce or seasoned salt if desired. Serve and Enjoy!
