Dice and sauté Onion until translucent about 3 mins
Add garlic and seasonings cook for 30 secs.
Add Ham and cover with broth cook covered for one hour.
Remove collards from the stem and chop into one inch strips.
Add greens to simmering broth cover and cook on low for one hour.
Remove ham hock from broth. Carefully, shred the ham hock from the bone using a fork. Return the shredded meat back into the pot.
Add additional hot sauce or seasoned salt if desired. Serve and Enjoy!
