Giant Greek Beans with Sun-dried Tomatoes

This is a recipe for Giant Greek Beans made with a marinade of sundried tomatoes, olives, olive oil, and roasted bell peppers. For this recipe I use red and black giant Greek beans, but feel free to use large white beans if that is more convenient for you.

This giant Greek marinaded beans can be eaten chilled or warm. Try them just by themselves with some additional olive oil, on some hardy bread, or as a side for a savory main meal.

I had to make this recipe for Giant Greek Beans as I love trying new beans and had recently come across these large colorful beans at the grocery store.

Giant Greek Beans with Sun-dried Tomatoes

Ingredients

  • 1/4 ea Onion diced
  • 3 ea Garlic cloves minced
  • 2 Tbsp Olive oil
  • 3 cups Cooked Giant Greek Beans
  • 1/3 cup Roasted bell pepper diced
  • 1/3 cup Green olives
  • 1/3 cup Sun-dried tomatoes diced
  • 1/2 bunch Parsley
  • 1/2 ea Lemon juiced
  • to taste Salt and pepper

Instructions

  • Dice onion, garlic, bell pepper, sun-dried tomatoes, and olives.
  • Warm a large pan and add olive oil.
  • Cook onions over medium heat until translucent.
  • Add Garlic and cook until fragrant then add bell peppers, sun-dried tomatoes along with the beans and cook for five minutes, add water or bean broth if necessary.
  • Add Olives and turn off the heat.
  • Add lemon juice and parsley and mix well. Taste for salt and olive oil and add more if desired.
  • Serve and enjoy!
