Dice onion, garlic, bell pepper, sun-dried tomatoes, and olives.
Warm a large pan and add olive oil.
Cook onions over medium heat until translucent.
Add Garlic and cook until fragrant then add bell peppers, sun-dried tomatoes along with the beans and cook for five minutes, add water or bean broth if necessary.
Add Olives and turn off the heat.
Add lemon juice and parsley and mix well. Taste for salt and olive oil and add more if desired.
