We here love all the different types of chili. Beef, turkey, chicken, beans or no beans, spicy or mild, it does not matter. Chili is a simply such a tasty, comforting, and versatile meal. This is my go-to recipe for turkey chili with red beans. It is easy, delicious, and quick to throw together. This recipe calls for red beans but feel free to substitute for black, white, pinto, or any other beans.
Ingredients
Ground Turkey This is the star of the dish so it is important to use a high quality ground turkey that is at least 7% fat as this will add flavor.
Avocado Oil I recommend avocado oil however you may use vegetable oil, olive oil, or any other suitable oil that you have on hand. Brown Sugar feel free to substitute with plain granulated sugar or leave out all together. The sugar helps to balance out the acidity of the tomatoes. Chili Powder If you want a milder chili use less or a milder brand of chili powder. Additionally, watch for added salts in your chili powder as it would mean reducing the amount of salt you need to add.Smoked Paprika This is easily one of my favorite spices. It adds a really nice smokey flavor. Fire Roasted Tomatoes If you can not find fire roasted tomatoes in a can you can take two pounds of roma tomatoes and roast them yourself under the broiler or on the grill. Once the tomatoes are nice and roasted, place them into bowl and cover. Let the tomatoes sit for 20 minutes, then dice and add to recipe making sure to use all the juice that is in the bowl. Red Kidney Beans You can use canned beans to make this an easy weeknight meal. However I prefer to cook my own from dry. In my opinion the beans hold up better and don’t break apart in the chili. The best brand of dried beans hands down is Rancho Gordo. They have the best quality and the most consentient flavor.Chicken Stock You may not need the full amount of stock depending on how much liquid is your canned tomatoes or beans. The goal here with the chicken stock is to add enough liquid to cover all the ingredients and keep the chili from drying out and adding more richness.
Heat a stock pot over medium high heat and add oil and ground turkey. Cook Turkey until browned about 5-7 minutes.
Add diced onion and cook until soften about about 4 minutes.
Add minced garlic and spices cook until fragrant about 1-2 minutes.
Add tomatoes, beans, and chicken stock and lower heat to medium low.
Simmer covered for 30-40 minutes.
Once done serve with our your favorite choice of toppings such as: Sliced Avocado, Chopped Cilantro, Sour Cream, Shredded Cheddar Cheese, Sliced Jalapeno.
