Simple Roasted Tri-Color Carrots

This is the most simple roasted carrot recipe. The humble carrot, in a variety of different shades, is tossed with just oil, salt, and seasonings. These roasted carrots make a versatile side dish that can accompany many different types of main courses. You can use all orange carrots if that is what is convenient for you. The variety of colors adds a fun visual component and gives a light variety of flavors as the different colored carrots do have slightly different tastes.

Roasted Tri Color Carrots
Ingredients
- 1 Pound Tricolor Carrots
- 2 oz. fresh thyme (Dry works as well)
- 2 Tbsp Olive oil
- 1/2 Tbsp Kosher Salt
Instructions
- Preheat oven to 375℉. While oven is preheating peel cut carrots in half lengthwise and place into a bowl
- Toss carrots with olive oil, salt and thyme.
- Place onto parchment lined baking sheet in a single layer and bake for 10-15 mins or until preferred doneness.
