Stout Braised Beef Stew

This easy delicious beef stew with the addition of irish stout elevates this comforting dish.

Ingredients

  • 1 Tbs Olive Oil
  • 1 lbs. Cubed Chuck roast
  • 1/2 ea Onion Diced
  • 4 ea Celery Ribs Diced
  • 2 ea Carrots peeled and diced
  • 2 oz Tomato paste
  • 14.9 OZ Guinness/stout of any kind (this is one can)
  • 1 Tbsp Beef Base I recommend the brand "Better Than Bouillon"

Instructions

  • Heat dutch oven or heavy bottomed pot on medium high heat. Add ½ of the oil and diced chuck roast to pot and cook until browned about 5 mins.
  • Add Diced carrots, celery and onion and saute until just soften about 4 mins.
  • Add tomato paste and cook until a deep brick red.
  • Add Guiness or stout and bring to boil. Let reduce on medium low heat for 10 mins.
  • Add beef base and add just enough water to cover beef. Stir to combine turn heat down to till it is just at a simmer.
  • Cover with lid and cook for an hour and a half or until beef is tender. Once done taste for salt preference and season to taste. Serve and enjoy.
